Project Overview

A growing café franchise needed their newest GTA location built right and built on time.

Rolly Polly Cow is a café brand with 7 locations across the GTA and Florida. When they signed their lease for a new location in Caledon, Ontario, they needed a commercial contractor who could take an empty 1,000 sqft commercial unit and transform it into a fully operational café within a tight, non-negotiable timeline.

The Challenge

The owner’s primary concern was the timeline. When a franchise opens a new location, the opening date is not flexible. Every trade, every decision, and every finish had to be coordinated around a single non-negotiable date. We agreed to take on that challenge and built the entire project plan around delivering it.

The Solution

Emstone executed a structured interior build-out beginning with demolition and site preparation, followed by coordinated electrical and plumbing upgrades.
Dedicated 240V power was installed for espresso equipment, panel capacity was verified and adjusted, and commercial-grade receptacles and lighting were integrated.
Plumbing lines were modified to support stainless steel sink installations and drainage requirements.
Custom millwork was fabricated and installed to support retail display and functionality, while a multi-layer metallic epoxy flooring system with anti-slip coating was applied for durability and performance.
Trades were sequenced in defined phases to maintain schedule control.

The Outcome

Handed over on schedule. Built to the owner’s exact vision.

The Rolly Polly Cow Caledon location was completed within the agreed 6-week timeline, delivered on the discussed budget. The owner received a fully operational café, cleaned and ready for occupancy on handover day.

Emstone was invited to attend the grand opening of the café. The space performed exactly as the owner had envisioned from the first planning conversation.
